Sweet Heat Smoked Almonds

Smoked almonds with a hint of sweet and a bit of heat made easy with the BBQue Can.

Ingredients

Note: This is a base recipe. You can add or subtract ingredients to your taste preference.

Ingredients for Sweet Heat Smoked Almonds.

  • 2 lbs raw almonds
  • ⅓ cup yellow mustard
  • ¼ cup favorite dry BBQ rub
  • ¼ cup BBQ sauce (the sweeter the sauce, the sweeter the almonds)
  • 1 to 2 tbsp crushed red pepper
  • 1 to 2 tsp cayenne pepper or chipotle seasoning
  • 1 to 2 tbsp Tabasco or Sriracha hot sauce
  • ¼ cup brown sugar
  • 1 tsp black pepper
  • ½ tsp salt
  • 2 tsp celery flakes

Items Needed

  • Tall BBQue Can (short can be used if you cut the recipe in half)
  • Smoker (Barrel House Cooker [recommended], pellet grill, offset smoker, or kamado of choice. A grill [gas or charcoal] can be used, but won’t impart as much smokiness to the almonds.)
  • Prep Time: 10 minutes (marinade 1-24 hours)
  • Cook Time: 1.5-2 hours
  • Skill Level: Easy
  • Makes 2 lbs of smoked almonds

Almonds Hanging

  1. Mix all ingredients together in a large mixing bowl.
  2. Mix in almonds until completely coated and marinade for up to 24 hours (one hour works just fine).
  3. Fill BBQue Can, leaving about one inch of space on top.
  4. Place filled BBQue Can on grill or in smoker for 1½ to 2 hours at 250-300°F. Rotate BBQue Can every 20-30 minutes. You can also shake the can while holding it with insulated pit gloves.

  1. When done, pour the almonds out onto a cookie sheet to cool. As they cool, they will harden and separate more easily.
  2. Enjoy super flavorful smoked almonds with a nice mix of sweet heat!
