Fish cooking in the Barrel House Cooker.

  1. If using the Cedar Plank, soak the plank in clean water for about an hour prior to using it.
  2. Lightly coat fish with olive oil and season with your favorite seasoning.
  3. Once the cooker is lit according to instructions, place a grate in the middle section of the cooker.
  4. Close the lid.
  5. Cooking Temperature: When properly started, the temperature inside the barrel will be 275-315°F; however, the thermometer will typically read between 220-260°F. The lid thermometer shows a lower temperature than where the food is cooking because it is affected by the exhaust.
  6. Let it cook 30-45 minutes before checking the internal temp. It should be about 140°F.
  7. Remove the fish from the cooker when done, then prepare it for serving.
  8. You're now ready to enjoy perfectly cooked fish!
