White Bean Chicken Chili

Make a healthy, delicious chicken chili using the Barrel House Cooker.

Ingredients

Chicken Dry Rub

  • Whole Chicken
  • 2 TSP Kosher Salt
  • 1 TSP Black Pepper
  • 1/2 TSP Garlic Powder
  • 1/2 TSP Onion Powder
  • 1 TSP Dried Thyme
  • 1 1/2 TSP Paprika

Chili Ingredients

  • 1 TBSP Ground Cumin
  • 1 1/2 TSP Ground Coriander
  • 1 TSP Ancho Chili Powder
  • 1/4 TSP Cayenne Powder
  • 4 Ears Fresh Corn
  • 2 Poblano Peppers
  • 2 or 3 Cloves Garlic
  • 1 Jalapeno
  • 1 Onion
  • 4 Cups Chicken Stock
  • 1 Can White Beans
  • 1/4 Cup Chopped Cilantro
  • 2 TBSP Lime Juice
  • Kosher Salt and Black Pepper to Taste
  • Sour Cream and Tortilla Strips for Topping

Directions

Prep the Chicken

  1. Use two hooks at the top of the chicken and make sure it’s secure.
  2. Mix all the dry rub ingredients together. Sprinkle and rub mixed seasoning onto chicken. Try to get seasoning in the cavity and under the skin.

Place Chicken

  1. Once lit according to the manufacturer's instructions, return the barrel back onto its base.
  2. Hang the chicken from the H-Frame.
  3. Check internal chicken temperature after one 1 hour and the internal temp at 165 degrees. When done let it rest.

Chili Prep

  1. NOTE: Remove the top drum-part off the smoker and put the grate over the coal for direct, hibachi style grilling.
  2. Grill poblano peppers and corn. The poblano peppers should be charred and the corn slightly charred. Place the poblano peppers in foil in order to steam.

Prep Ingredients for Cooking

  1. NOTE: Place the top part of the smoker back on the base and place cast iron Dutch oven in order to pre-heat.
  2. Pull the chicken apart when cooled. Slice the poblano peppers and corn, set aside.
  3. Finely dice garlic. Chop onions and jalapeno (remove seeds if preferred).
  4. Once cast iron is hot add the spices and stir with oil. Add onions and garlic until cooked. Add chicken broth and let it simmer.

Finishing up

  1. Rinse and drain white beans (slightly mashed). Add lime juice and let it simmer.
  2. Add poblano pepper, corn, and chicken. Add another can of white beans.
  3. Let it simmer and add cilantro. Mix together and it’s ready to serve.
