Tips

It is important to follow the easy lighting instructions. When the cooker is lit correctly, it operates at the correct temperature for the entire cook.

We highly recommend the use of a digital instant read thermometer, such as the Javelin Instant Read Thermometer, to check the internal temp of food for doneness. This quickly ensures perfectly cooked food to your preferred level of doneness (e.g. rare vs. well done).

Taking Ham Out of Barrel House Cooker

Taking the ham out with the optional EZ-Load Turkey Plus Kit.

  1. Buy a pre-cooked, cured and/or smoked ham of your preference. It can be bone-in, bone-out, spiral cut, or not. It is entirely up to you.
  2. Season the ham with a pork seasoning, glaze, or both.
  3. Once the cooker is lit according to the instructions, you have a couple options for cooking the ham. Either place the ham on a grate on the middle level of the cooker or use the EZ-Load Turkey Plus Kit to hang the ham.
  4. Cooking Temperature: When properly started, the temperature inside the barrel will be 275-315°F; however, the thermometer will typically read between 220-260°F. The lid thermometer shows a lower temperature than where the food is cooking because it is affected by the exhaust.
  5. Let the ham cook for about 2 hours (let it cook longer depending on the size) before checking the internal temp. The ham should be at least 140°F when finished.
  6. Remove the ham from the cooker and prepare it for serving.
  7. You're now ready to enjoy delicious ham!
